Peanut Butter Chocolate Chip Cookies


4 ½ cups 1 for 1 bob’s flour

2 teaspoons baking soda

2 teaspoons koshering salt

3 Tablespoons flax seeds/meal

1 ½ cups raw or white sugar

1 ½ cups light brown sugar

1 Tablespoon vanilla (whiskey works too)

1 cup Portland Spicy Peanut Butter**

1 cup coconut oil*

1 Banana***

Crank your hotbox to 375 and prepare your favorite ungreased cookie sheet. 

Put all the white powders together in a large mixing bowl and whisk together for one sing through of twinkle twinkle little star and set aside.

In a second large mixing bowl add sugars, oil and PB first to create a paste. This will not be terribly simple but if you use a wooden spoon to mix and add your prepped banana*** midway through the process it usually gets to a paste.

Next comes the flax. Whole flax seeds should be ground before use and left to sit for 5 minutes after mixing with water. If you are using flax meal; simply mix water and flax together at the 3 TBSN water to 1 TBSN Flax ratio and let sit 5 minutes before adding it to the brown paste.

Add your splash of vanilla and begin mixing white powders into paste. I typically glove up and get in there with my hands but that's for you to decide for yourself.

Mix until cookie dough appears, dump in chunks form into balls with your hands

Bake for 9-11 minutes. 

Makes: More than you need but never too many.

  • 1 for 1 Bob’s Red Mill GF flour(light blue bag)

  • Flax seeds (flax seed meal)

  • Light brown sugar

  • White or fine cut raw sugar

  • Banana

  • Bag of vegan chocolate chucks 

  • Salt (I prefer koshering salt) 

  • Baking Soda

  • Vanilla

  • Coconut oil*

  • Portland Spicy Peanut Butter**


*= There are a lot of coconut oils on the market that you can get. They range from seemingly reasonable in price to basically their weight in gold. Unfortunately, I have found a difference in them and the more expensive “unrefined extra virgin coconut oil” is the way to go. And just look for these words, any other things that are offered haven’t vastly improved my cookies and instead just devastated my wallet. Unrefined extra virgin coconut oil makes the finest texture and texture in cookies is vital and sometimes you just shouldn’t skimp.

**=Well duh

***=Bananas come in a convenient package. Mash the banana in the peel before peeling it to avoid a mixing disaster.
